To enhance the flavors of the Semolina, only pure water from the spring located at an altitude of 2,000 meters on Mount Latemar is used. All products are certified ORGANIC by Controllo Biologico and Agricoltura Biologica JAS. Also certified Kosher by OK Kosher. KAMUT (Triticum Turgidum Turanicum): "A wheat from the past -- that looks toward the future." This ancient strain originated in the Middle East and was rediscovered and patented by the American farmer, Robert Quinn, who sought to protect its authenticity. This modern Durum wheat is two or three times larger than ordinary wheat, has a protein content up to 40% higher, rich in vitamins, minerals and amino-acids.
