Size:5 Pound This Organic Heirloom Pastry Unifine Flour is the finest available anywhere, low in gluten, and perfect for making flaky pie crusts, delicate cakes and delicious cookies. The flour is made from Heirloom Soft White Wheat and grown for decades on the organic Azure Farm in Dufur, OR. Compared to modern wheat, this heirloom variety is lower in gluten and higher in protein, micronutrients, minerals and antioxidants. All natural, no preservatives or additives, no bleaching or enriching. Azure Standard’s Unifine flour is milled at the Azure Farm Mill in Dufur, Ore., one of only a few such mills in the world, and family owned. The name “Unifine” comes from the milling process itself, where it takes just one step (uni) to produce a very fine, uniform consistency, while also preserving the natural nutrients of the grain. With Unifine Milling, the grain enters a high speed rotor with a single-pass impact system that instantly pulverizes the kernels with little heat involved, bursting into fine flour at a cool temperature. With this unique, one-step milling process the entire bran, germ and endosperm of the grain are retained, resulting in superior nutritious flour, and the oil molecules are left intact resulting in a longer shelf life. Ultimately, Unifine milled flours from Azure are packed with many times the nutritional value compared with commercially milled flours. It has almost four times as much dietary fiber, more than twice as much potassium, and three times the magnesium. Whole grain Unifine Flours require the baker to use significantly more water than commercial white flours or other milled brands. With germ and bran intact, there should be less mixing or kneading, and longer time allowed for fermentation and rising.
