That is why Corto 51-49 is a unique blend of 51% Extra Virgin Olive Oil and 49% Non-GMO Expeller Pressed Canola Oil. From the first taste to the last, you’ll notice the difference between our oils and others. We take painstaking care in the production of our oils, from harvest to meal. Typical olive harvest season is in winter, when they are over-ripe and fall to the ground. At Corto, we hand-verify optimal picking time for flavor and maturity. Then we use over-the-row harvesters to collect olives that are at the peak of their freshness. We harvest in the Fall, when olives are still green with just a hint of violet. Olives are quickly brought to our state-of-the-art mill. There our cold extraction method keeps the integrity of the oil’s natural flavor. This perfect flavor is further protected in our climate-controlled cellar. There the oil will remain until you place an order. We taste-test every batch to ensure that our oils retain their signature flavor. After each test, we package this aromatic blended oil in a proprietary oxygen-free, light-free FlavorLock box.
