Flavor:PR1-Mild Blue Cheese PR1, 10 Units by CHR Hansen is lactose free and will produce a blueish-green color with a mildly sweet blue cheese aroma and a little apricot-apple/banana flavor. The texture will be firm and lipolysis (breakdown of the milkfat) will be medium and effect on proteolysis (breakdown of milk proteins) will be very low. This will emulate a traditional American stabilized paste blue cheese. In a commercial setting this can make 264 gallons of blue cheese. In a non-commercial setting, use just a pinch per two gallons of milk. Per Amazon policy, we cannot accept back food-based perishable items. An ice pack is available for purchase if you wish to protect your product during the summer months.
